Minnesota may have decent-sized Vietnamese population, but Chef Christina Nguyen still felt some flavors were missing when she would go out to eat. After a three month trip the Southeast Asia, Christina felt inspired. Now at her restaurant Hai Hai, she serves dishes from both her childhood and travels like water fern cakes she used to eat in her church basement, her grandfather’s favorite turmeric & dill fish, and Balinese chicken thighs inspired by a pig roast in Bali.

When Chef Nasim Alikhani returned to her home country of Iran after a 9-year gap she quickly realized how much she missed the incredible food she had grown up eating. The food was vibrant and bright, and she thought how crazy it was that more people didn’t know about the delicacies of tahdig and kofteh in saffron broth. At her restaurant Sofreh, in Brooklyn Chef hopes to educate the people of New York about Persian food and its culture.
